Aloo Roast - Spicy Potato Fry

Its cold winter here, (below sub zero and its sleeting)!!! Its natural to bring up all the spiciness in the dinner plate, right.

No matter how you treat them, potatoes are about to take all the influences that you import! Its starch,...naturally bland, acquires the flavour while pairing up with spices and herbs. Whether its a side dish or gravy, potatoes are casual to suit any menu.

The potato fry today is just a formula...you can add or subtract any ingredient that you want. But I do strongly suggest not to skip Vadagam, it actually adds lot of flavour...makes it unique! This style of cooking roots and tubers is my best effort to date.

Ingredients:

Potatoes 3 large (peeled, cubed and boiled + rinsed)
Green chilies 2 sliced
Giant Red onion - largest 1 sliced
Garlic 7 cloves sliced
Ginger 2" julienned
Tomato 1 large
Curry leaves few
Cilantro leaves few
Salt
Turmeric
Chili powder
Mustard seeds 1/2 spoon
Cumin seeds 1/2 spoon
Asafoetida 1/2 spoon
Chana dal 2 spoons
Urad dal 2 spoons
Vadagam 1-2 spoons
Sesame oil 1 table spoon.

Method:

In a wide wok, heat oil. Add the spices and wait till they splutter well.

Followed by green chili, ginger, garlic and onions...fry real good.

Add salt, turmeric and chili powders. Further add tomatoes, cover and cook.

Now stir-in well cooked potatoes...fry real good. Continue cooking over low-medium heat for more than 20 minutes or until you achieve desired color and aroma.

Enjoy as a side dish for roti or rice...as you please.

Dear Malar
It has been always a great treat to read your posting. Never looked at dear Potatoes in this way..It is so true really!!!
I did not have any Idea what was Vadagam, so followed your link to have some idea. Now I will see where to get it in Delhi!! I am not going to cook this without Vadagam. I note that you havent used any paste, it gives different taste.
Finally when do I add Vadagam? with the chili powder or earlier?

I too made potato fry with dhal today :)..my version is also similar to your Malar though I never tried adding tomatoes...will try out yours soon....looks spicy and awfully tempting :)

Potato fry sounds more than a side dish to me, I'll eat it even for as a maincourse; looks well spiced & nicely flavoured with vadavam, must be toothsome!! I love adding vadavams to some of my preparartions, especially those with tamarind... next time I do potatoes fry, I 'll try this method using vadavam!! have a nice day Malar!!
