Prawns Thokku / Shrimps Thokku - Start Cooking!

Other than cooking shrimps in curry form, my mother never thought about combining it with new ingredients. Shortly after I started cooking, I kept experimented with various spices and combination. To my surprise, the result was good the each time. My first idea was never to repeat the same old recipe or method. However, when something turned out spectacular, will definitely be making them again. Later, traveling also improved my culinary perception a little. And cooking became an addiction these days. Well, it is one of the earliest form of celebrating life. The variety cooking seem to have taken the food blogging world by storm of new posts appearing every day. If you haven't cooked anything differently, maybe its perfect time to visit your kitchen...check out this recipe, done with extra effort and flavor.

Ingredients:

Fresh shrimps 2 cups - de gut, shelled, retain the tail fin
Garlic 1 large head...pealed and grated
Onion 1 large finely chopped
Tomato 1 large crushed
Salt
Turmeric 1 pinch
Lemon juice few teaspoons
Chili powder 2 teaspoons
Curry leaves few
Mustard seeds 1/4 spoon
Cumin seeds 1/4 spoon
Sesame oil 1 table spoon.

Method:

Marinate the shrimps with salt, lemon juice, turmeric and chili powder. Maybe couple of hours should be good.

Heat oil in a wide wok. Add mustard and cumin seeds. Wait till they pop and sputter.

Further add garlic and onions. Fry real good till fragrant. Now, add the tomatoes too...fry till oil separates. Stir-in shrimps at this point. Wait till it turns opaque. Then cover and cook in low-medium heat briefly.

Once the shrimps are half the way done, remove the lid and stir-fry over high heat till reddish brown and crisp. When the oil shows up on the sides and top...remove from heat.

Serve warm to go with your steamed rice.

Prawn 65 / Shrimp Pakora - How About That?


Shrimp 65:

Now a days, coz' of blogging...it looks like am obsessed with cooking! No, no...people take advantage of me:( Where ever I go, call it a simple vacation or even sick leave, lady of house will be overwhelmingly happy to see me, only for her benefit' taking a day or two off' from her messy kitchen! However, I never turn them down, when they offer me their spatula! So, there you go...that is how I end up cooking always and anywhere...every single day:(

Ingredients:

Fresh shrimps 1/2 kilo (of course peeled n cleaned)
Ginger 2" minced
Garlic 3 cloves minced
Salt
MSG 1/4 Spoon
Soy sauce few spoons
Lemon juice few spoons
Corn flour few spoons
Chili powder 2 spoons
White pepper powder 1 spoon
Garam masala powder 1/4 spoon
Olive oil for pan/deep frying

Method:

Combine all the ingredients together(except oil), marinate for two hours.

Heat oil in a deep frying pan. When it comes to smoky hot, fry few shrimps at a time. Leave them over kitchen tissues for a while. Repeat the same for each batch.

Serve steaming hot as appetizers.

Shrimps Pepper Fry - Cooking It, My Style!

I cant keep quiet for sometime, from getting my hands dirty:( On the other day, as usual I was on the trip (from deep South to North America)...on a thick cloudy snow day, where there are hardly any people around (the local population of each county, proudly displayed less than 100), it was a remote country side inn (now, you can imagine all the ghost movie's houses that comes to your mind first). There was not even any fast food joint in the visibility, for a simple Sub or French fries...one has to travel 30 miles???!!!

When I was in India (hostel), I used to tell my friends...give me 2 cloves of garlic I can show you the magic...make this hostel meal and an edible one:) [Note: I never utter the word, yucky to any worst meals, I encountered. My mother never tolerated people cursing their meals and so am I].

Back to the story, here the good news is...they had a country store nearby and the Inn was well-equipped with some cutlery. I have survived in more-drastic conditions...so, this never scared me a little. Good, I could manage decent cooking, anywhere...am proud of myself at last! Anyhow, I think, managing with just basics is an art' than being very particular about everything that is thought to be required! So, when I found this shrimps and one garlic head, its a triumph:)

Ingredients:

Shrimps large - with skin on (but please remove the head and gut)
Garlic 7-10 cloves - chopped or minced, as you please
Salt
Pepper powder - as per taste
To garnish, cilantro or green onions or curry leaves(whatever you find that day)
Oil few spoons.

Method:

Nothing fancy, heat up the skillet or griddle. Add oil and shrimps, followed by garlic...stir-fry over high heat. Once it is tender enough...add salt and pepper.

Serve warm to go as a filling to tortillas or steamed rice, or one can even eat it with chips...like me:)

Iral Kara Kuzhambu / Shrimps in Tamarind Based Curry



Iral Puli Kuzhambu:

Other Names: Roiyalu Pulusu. Chemeen Theeyal. Prawns in Tamarind Curry.

Ingredients:

Small shrimps 1 cup
Pearl Onions 5-7 chopped
Garlic 5-7 cloves - crushed
Tomato 1 small - chopped
Tamarind milk 1 cup
Salt
Turmeric
Chili powder
Jaggery 1 spoon
Fresh grated coconut - stir-fried (I completely skipped this, coz' of no decent coconuts are found in my area)
Sesame oil 1 table spoon
Thallippu vadagam
Mustard seeds 1/4 spoon
Cumin seeds 1/4 spoon
Fenugreek seeds 1 pinch
Asafoetida 1 pinch
Dry chili 1 minced
Curry leaves few.

Method:

In a wide iron wok, heat about 1/2 table spoon of oil.

Add the garlic, onions and keep frying. Now add tomatoes, cover and cook briefly.

Further add salt, turmeric, chili and jaggery. Add shrimps and about a cup of water. Continue cooking over low heat without lid. Once the curry thickens, its done.

In a separate pan, heat oil and add all the tempering spices, wait till they pop and splutter...now run the same over the curry prepared.

Serve warm to go with plain steamed rice.

Eggplants-Shrimps Masala / Brinjal-Prawns Masala





Kathirikai-Iral Varuval:

Other Names: Kathirikai-Iral Thokku. Aubergine-Prawns Curry. Chingri-Baingan ka Subzi. Chemmeen-Kathirika Kari.

Ingredients:

Eggplants 6-8 sliced
Small shrimps 1 cup
Green chili 1 chopped
Onion 1 chopped
Ginger-garlic paste 1 spoon
Tomato 1 crushed
Salt
Turmeric 1/4 spoon
Chili powder 1 spoon
Oil few spoons
Mustard seeds 1/4 spoon
Cumin seeds 1/4 spoon
Curry leaves few.

Method:

Heat oil in a wok, add the tempering spices, followed by ginger-garlic, chilies, curry leaves, onions and tomatoes. Fry till fragrant.

Now add sliced brinjal to it...add salt, turmeric and chili powder. Cover and cook till tender.

Once the veggie is done, add shrimps and stir-fry over high heat.

Garnish as you please. Serve warm to go with your meals.

Shrimps Stir-Fry with Universal Seasoning - En-Soy!!!



Prawn Stir-Fry:(Chinese Style)

Ingredients:

Shrimps - de-gut, shelled and briefly cooked 1 large bowl
Garlic 7 cloves - chopped n minced
Dry red chilies - flakes as per taste
Soy Sauce 1 table spoon
Green onions 1 bunch chopped
Sesame oil few spoons.

Method:

Marinate the shrimps in soy sauce for couple of hours, prior to cooking.

Heat a skillet, add oil and throw in chilies and garlic...wait till fragrant.

Followed by shrimps, stir-fry over high until all the juices are evaporated.

Garnish with green onions and serve steaming hot to go with your noodles or fried rice. Okay, okay I got it...you know what to do:)

Baby Bok Choy and Shrimps Stir-Fry - Chinese Style!




Baby Bok Choy and Shrimps Stir-Fry:

Ingredients:


Shrimps 2 cups
Baby Bok Choy 4
Large Onion 1 sliced
Sugar 1/2 spoon
Vinegar few spoons
Red chili flakes 1 spoon
Garlic cloves 10 chopped
Thick soy sauce
Olive oil few spoons.

Method:

In a wide skillet, heat oil. Add the garlic and onions and fry real good. Add sugar and vinegar, continue frying till they brown. Add shrimps and stir-fry briefly.

Now add the greens and soy sauce, stir-fry over high heat...add chili flakes too. Once the leaves wilt and the stem gets tender, its done.

Serve to go with sticky rice or jasmine rice or fried rice, noodles etc. Enjoy.

Green Beans - Shrimps Curry / Beans-Prawn Curry






Beans-Eral Kuzhambu:

Ingredients:

Beans 1 bowl
Prawns 10-15 large
Garlic 5-7 cloves minced
Ginger 2" grated
Onion 1 large- grated
Tomato 1-2 crushed
Salt
Turmeric 1/4 spoon
Chili powder 1 spoon
Cumin seeds 1 spoon
Oil few spoons.

Method:

Heat oil, and add cumin seeds. Add ginger-garlic and onions. Fry real good, till fragrant.

Further add tomatoes, salt, turmeric and chili powder. Add beans too. Cover and cook briefly.

Followed by shrimps...cover and cook till tender.

Serve to go with rotis or rice.

Thai Style Bok Choy and Shrimps Fried Noodles






Bok Choy and Shrimps Fried Noodles:

Ingredients:

Noodles - a bunch
Bok choy
Carrot
Beans
Cabbage
Bell peppers/Capsicum
Eggs 2 - scrambled
Shrimps with shells 1 cup
Sesame oil
Chinese 5 spice powder
Red chili flakes
Ginger 1" grated
Garlic 2 minced
Thick soy sauce
Chili sauce
Garlic-sesame soy sauce
Honey 1/2 spoon
Grated peanuts 1 cup
Chili flakes 2 spoons
Green onions to garnish.

Method:

Cook the noodles alias pasta as per the direction. My way...it should be done, but never over done:)

Stir-fry greens and the veggies with pinch of salt and MSG. Set aside.

Marinate shrimps with soy sauce and stir-fry till crisp. Set aside as well.

In a wide heavy bottomed wok, heat oil. Add 5-spice powder, chili flakes, ginger-garlic, peanuts and the noodles...fry over high heat, until oil coats on it, evenly.

Now add all the sauces plus honey. Further add the fried shrimps plus veggies, eggs etc. Fry over high heat. Garnish with green onions.

Serve warm as a main dish. Its a complete meal:)

Tamarind Prawns / Iral Varuval / Fried Tamarind Shrimps




Eral Varuval:

Chemmeen Varuval. Iral Porichadhu. Shrimps Fry with Indian touch of spices.

Ingredients:

Shrimps 1/4 kilo
Salt
Turmeric 1/4 spoon
Chili powder 1 spoon
Tamarind paste 1/2 spoon
Oil for shallow frying.

Method:

Mix all the ingredients together, except oil. Marinate them for couple of hours.

Fry them till crisp, in hot oil.

Serve warm to go with your meals, enjoy:)

Bottle Gourd & Shrimps Curry




Soraikkai-eral Thokku:

Okay, as I confessed to you all earlier...giving up meat and seafood is difficult for me, but including more veggies sounds like a perfect option:) Combining hint of meat or seafood to certain vegetables is like magic! The resulted dish turns completely out of this world, very delectable you know! So, here you go, one such amazing amalgamation.

Ingredients:

Bottle gourd chopped 1 large bowl
Shrimps 6-10 pieces
Green chili 1 chopped
Garlic 4 cloves minced
Onion 1 small chopped
Tomato 1 small chopped
Salt
Turmeric 1/4 spoon
Chili powder 1 spoon
Mustard seeds 1/4 spoon
Cumin seeds 1/4 spoon
Curry leaves few
Sesame oil few spoons.

Method:

In a wide wok, heat oil. Add the tempering spices and wait till they pop.

Further add chilies, garlic, onions and tomatoes. Add salt, turmeric and chili powders too.

Now, add the veggies and shrimps, Cover and cook till tender.

Serve to go as a side dish for rice or chappathi.

Chinese Chow Mein / Chao Mian - Chinese Fried Noodles





Shrimps And Veggies Chow Mein:(Chinese Style)

Ingredients:

Spaghetti - a bunch
Carrot
Beans
Cabbage
Bell peppers/Capsicum
Eggs 2 - scrambled
Shrimps with shells 1 cup
Sesame oil
Chinese 5 spice powder
Red chili flakes
Ginger 1" grated
Garlic 2 minced
Thick soy sauce
Chili sauce
Garlic-sesame soy sauce
Honey 1/2 spoon
Green onions to garnish.

Method:

Shrimps Tandoori / Tandoori Prawns - With Vegetarian Version!!!










Tandoored Prawns:

Grilled Shrimps in Indian Way. Spicy Indian Grilled Shrimps. Tandoori Prawn. Tandoored Shrimps.

Vegetarian' Choice - Tandoored Cauliflowers:)

I had a minor panic attack...when my father asked me, 'if I could consider embracing vegetarianism in future'! Oh my, that's huge!! Let me put it this way, I love animals, honestly I do...but if I love something so much, I can never be apart from it, right. Well, I didn't choose to eat them, in fact they chose me to pick them for dinner...the adaptation they all went through during this big evolution thing' to be more tame' meatier, juicier' etc...in order to allure predators like me to prey on them. So in one way, we made sure their genetic pool is rich...by selective breeding, cloning, hybridization, what not!!! On a rough scale it keeps the cycle going.

Our domesticated animals...in fact domesticated us, to feed on them...as they can easily get away with natural enemies of their own...its really harsh in the wild, out there! It could be rare for them to survive and pass on their legacy!!!

Anyhooo, I hear a lot of cruelty towards farm raised animals these days, which seriously brings some concern. Hmmm, will try to reduce my intake and frequency for time being...quitting is really hard!!! As Upanishad said, in this cosmos' "We Eat Some, Some Eat Us":)

Ingredients:

Tiger Shrimps - Fresh, beheaded, guts removed, shell retained:)

Spices to be Toasted & Powdered:

Cinnamon
Cloves
Cardamom
Peppercorns
Coriander seeds
Tymol seeds
Chironji
Saffron

Use only a pinch of above spice blend.

Other Ingredients:

Black Salt
Regular Salt
Chili powder
Kashmiri chili powder
Red food color
Turmeric
Lemon juice
Yogurts (hung)
Ginger-garlic paste
Onion paste
Mint paste
Few cubes of butter/ghee for basting
Chaat masala to garnish.

About 1-2 spoons of above ingredients (ratio? you must decide).

Method:

Marinate the shrimps with plain salt, lemon juice and chili powder for about a hour.

Then followed by all the above mentioned items, except ghee.

Maybe for couple of hours will do!

Now, smear them with ghee and grill them till crisp on the outside.

If you prefer to do it in the oven, bake them for 30 minutes over 350 degrees and and broil them briefly for 2 minutes, often changing its position!

Shrimps in Spicy Curry - Simply Irresistable



Prawn Pepper Curry:(Typically Southern Style)

Iral Milagu Kuzhambu. Shrimps Pepper Curry.

Ingredients:

Shrimps 1/2 kilo
Salt
Turmeric
Chili powder
Curry leaves
Cilantro
Oil

Wet Grind These:

Ginger 1"
Garlic 2 cloves
Onion 1 large
Tomatoes 2

Toast and Powder These:

Fennel seeds
Coriander seeds
Peppercorns
Cumin seeds
Poppy seeds
Dry coconut

Method:

In a wide wok, heat oil. Add the wet-ground paste and fry real good, until oil shows up on top.

Now add shrimps, followed by the spices mentioned above...fry over low-medium heat of a long time, maybe until all the spices turn aromatic and nice. Add enough water and bring this to boil, once it consolidates into rich gravy, turn off the heat.

Serve happily:)
